JANE SMIILIE'S I DON'T WANT A PICKLE-JUST A HIGH-PERFORMANCE
CUCUMBER
My friend Dal Smilie, the vice chairman of the AMA board d directors
and former long-time chairman of the board of the AMA's Hall of Fame
Museum, sent in his
wife Jane's recipe in honor of the AMA and the AMA's Hall of Fame Museum. '
Says Jane, who Dal calls "an all-around motorcyclist and great cook," "Cucumber
salads are as much a part of summer Midwest nights as fireflies and Harley-Davidson.
These have been personally modified for higher performance, personalized just
like your Harley. The addition of the jalapeño wakes up this little
dish and makes it fun, but don't make it so hot your buddies will be offended:
1/2 cup vinegar 1/2 cup water
1/2 cup sugar
Green or purple onions or leeks cut up as you like, to your taste Peeled and
sliced cucumbers
Chopped jalapeno pepper - add to whatever "stage" of enhanced performance
you like
1. Place the vinegar, water, and sugar in a large saucepan and bring
to a boil. Add the onions or leeks, cucumbers, and jalapeño.
2. Transfer to a container and let marinate in the fridge for a while before
serving.
